Li-Po NewBie needs help

I can't seem to find much Info on Li-Po batteries but I think I'm in the right place now. I have been flying a CocoLama G5 with 7.4v 800 MAH 10 & 12 C Li-Pos. I assume the C is the discharging rate and the MAH is the capacity, Is this correct? Is everything good as long as I use 7.4v? Will a 1200 MAH give me more flight time and not hurt anything? Any help here would be greatly appreciated.
